Is it just plot armor or is there some sort of force sense that allows them to know when a bolt is coming from directly behind them?

Precognition is one of the most common Force abilities we see. Adept Force users are able to sense anything from the timing and location of a blaster bolt to the impending downfall of society.
The force.
The living force connects all living things and they can sense other people’s intents and emotions and thoughts through it.
The physical force also would warn them (or just make them aware) of things like falling rocks, too.

Different aspects, you could say, of The Force.
Gin explains to Yoda (as a force ghost,) that the living force feeds into the cosmic force, etc. the living force connects all living things where the cosmic force is where the living go when they no longer live, the physical force connects inanimate objects (and lets Jedi toss rocks,) etc.
But it’s all the same thing in the end, just a question how to see it.

Same as any super hero, that uses super powers. So yes, it’s plot armour. Anything that has super powers is actually plot armour.
Correct, there is force speed! (If George Lucas’s intentions are to be taken as canon.) It’s shown in the 2002-3 Clone Wars cartoon, a deleted scene in Revenge of the Sith (it looks really goofy) and is arguably shown in how some force users like Yoda and Sidious leap around so fast.

I’m not sure about Disney’s lore, but in Legends Jedi are basically super-psychics that can tap into (sometimes literal) magic abilities. That’s the reason why they fall so hard on either side of the spectrum, but it also gives them a bit of a general sixth-sense (most video gameplay doesn’t count imo) about their vicinity kinda like Spider-Man.
